Nicole’s Vietnamese Veggie Rolls

Nicole introduced me to these yummy vegetarian/vegan veggie rolls. They can be a bit tricky to roll, but I think the trick is to not over-stuff them.

Time: 1 hour

Makes: 10-12 rolls

Ingredients:

Sauce:

  • 3 tablespoons hoisin sauce
  • 1 tablespoon chilli garlic sauce
  • 1 tablespoon peanut butter
  • 2 tablespoons water

Rolls:

  • Rice paper
  • Carrots, shredded
  • Celery, shredded
  • Pepper, shredded
  • Green onion, chopped
  • Cilantro, chopped
  • Soy beans, chopped
  • Lettuce, chopped
  • Rice noodles

Directions:

  1. Blanche noodles, press out access water and dry.
  2. Prepare rice paper by soaking in lukewarm water for approximately 10 seconds.
  3. Spread rice paper on a towel and fill with veggies and rice noodles. Roll tightly. Cut each one in half and set out on a platter and serve with the sauce.
