Jackie’s Yummy Apple Juice Chicken

Another great recipe from my mother-in-law. This is a great dish that everyone loves and it is so easy to throw together.

Time: 1 hour

Serves: 4-6

Ingredients:

  • 1/4 cup flour
  • 3 teaspoons salt, divided
  • 1/2 teaspoon pepper
  • 1/2 teaspoon thyme
  • 1/4 cup butter
  • 4 chicken breasts or 8 boneless skinless chicken thighs, cut into 1-2 inch pieces
  • 1/2 cup sliced mushrooms
  • 2 tablespoons lemon juice
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/3 cup apple juice
  • 4 green onions, chopped

Directions:

  1. Mix flour, two teaspoons of salt, pepper and thyme in a plastic bag. Place the chicken pieces in the bag and shake to coat with flour mixture.
  2. Melt butter in a frying pan and brown chicken in it. Remove and place in a casserole dish.
  3. Add mushrooms to the pan and cook for three minutes. Add green onions and place in the casserole dish with the chicken.
  4. Combine apple juice, lemon juice, sugar, and salt. Pour over chicken mixture and bake at 250 degrees for 45 minutes.
  5. Serve with rice.
