Mom’s Cheesecake

The cheesecake loved by everyone.

Time: 1 hour

Serves: 12

Ingredients:

For the crust:

  • 1 1/4 cup graham crumbs
  • 1/4 cup sugar
  • 1/4 cup butter

For the filling:

  • 500 grams cream cheese, room temperature
  • 500 grams sour cream, room temperature
  • 2 eggs
  • 3/4 cups of sugar, divided
  • 1 1/2 teaspoons vanilla extract

Directions:

  1. Preheat oven to 375 degrees.
  2. Melt butter and mix sugar and graham crackers. Pat firmly in a 9-inch springform pan.
  3. In a large bowl, mix together the cream cheese, eggs, 1/2 cup of sugar, and vanilla. Pour over crust. Bake for 20 minutes.
  4. Remove the pie from the oven and let it side for 10 minutes.
  5. Preheat oven to 475 degrees.
  6. Mix the sour cream with 1/4 cup of sugar. Pour over cheesecake and bake for 10 minutes.
  7. Set aside for 1-2 hours. Refrigerate for 12 hours.
  8. Serve with toppings.

Strawberry Toppings

Ingredients:

  • 2 1/2 cups of fresh strawberries
  • 1/3 cup white sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Roughly chop the strawberries.
  2. Combine the strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for awhile, but then the juice will begin to form. Mash a few strawberries with a wooden spoon to help produce the syrup. Cook until the sauce thickens, approximately 15 minutes.
  3. Remove from the heat. In a blender, puree about 1/3 of the sauce, then mix back into the remaining topping. Refrigerate.
